Thai Pineapple Cauliflower Fried Rice

Despite this whole cauliflower craze, I’m still NOT sick of it! To be honest, cauliflower is probably one of the best vegetables for ALL sorts of substitutions – fries, pizza, pasta, rice, mashed potatoes, etc. You name it, cauliflower can replace it – it’s a miracle worker! This dish is amazingly easy and will impress the hell out of your guests serving it this way!

Over the past weekend, I spent some time in Naples, FL, which is where my parents live. I’m lucky that my parents live a very healthy lifestyle so they’re extremely supportive of this PurelyPope venture! Hence where I get my love for wellness from! We had a family party on my birthday and they let me whip up this delicious rice to pair with our filet mignon. Not your typical Memorial Day Weekend side dish, but let me tell you – they all LOVED it!

HEALTHY TASTES GOOD!

Even my uncle who can sniff anything healthy from a mile away approved! My aunt immediately got the recipe so that she could make it this week. It’s honestly such a simple recipe with minimal spices required and tastes insane. Everyone was raving over the combo of spicy with a subtle hint of sweetness. You will not be disappointed with this you guys!

& RECIPES CAN BE SIMPLE!

When I gave my mom a taste test, she said absolutely nothing else was needed. This is something that NEVER happens! She’s a intuitive chef, cooking on the whim AMAZING concoctions, but she never cooks to an exact recipe, she wings it. She adds a little dash of this, a little sprinkle of that, etc. I absolutely LOVE this and her cooking is unbeatable, but I reminded her the need for my age demographic to also KEEP IT SIMPLE. I’m not going to go out and buy a million seasoning and spices – that’s not budget or time friendly.

Cauliflower Specifics!

Now let’s get cooking good looking! For this specific recipe, a majority of it is fresh produce, which you guys have probably noticed that most of my dinner recipes are. However, I do use these Coconut Aminos for the rice. If you want to make this as a main dish vs. a side dish, I would recommend adding it eggs, shrimp or chicken for protein. Just cook it first and then mix in with the sauces! If you are doing the full meal deal, whip up this vegan cheesecake to round out the tropical delights. Bon appetit!

Thai Pineapple Cauliflower Fried Rice

Ingredients

  • 2 Packages Riced Cauliflower, Thawed
  • 1 Pineapple, Halved & Hollowed For Serving
  • 2 Red Pepper, Diced
  • ½ Red Onion, Diced
  • 2 Jalapeno, Sliced in Coins
  • 10 Mushrooms, Sliced
  • 1 Cup Coconut Aminos
  • 1 ½ Cups PB2 Original or 1/2 cup peanut butter
  • Salt & Pepper, To Taste

Instructions

Get Ready for Some Cauliflower POWER!

  1. First up, be sure to dice all of your veggies to recommended preparation above.
  2. For the pineapple, slice in half vertically, and then hollow out the middle so that you get two pineapple ‘bowls.’ From there, dice up the pineapple you scooped out and set aside two cups of the diced pineapple. Freeze the rest for smoothies!
  3. I recommend using a cast iron skillet for flavor, but if you don’t have one a regular large skillet will do. Begin with a drizzle of olive oil on your pan and add in your pineapple, red pepper, onion, mushrooms and jalapeno. Allow to saute on medium heat for about 10 minutes, until vegetables get soft.
  4. Then, add in your cauliflower and allow to cook for about another five minutes on medium heat, stirring constantly.
  5. Finally, add in your coconut aminos, mix well, and then toss in your PB2, salt and pepper. Mix wel.
  6. Allow all of the flavors to simmer together for about another five minutes.
  7. Serve in your two pineapple halves & your ready to eat!
