Triple-C Cookies – Cinnamon, Collagen & Coconut Done Right!

For those of you that have been following me for a bit, or if you know me personally, you know I’m a sweets JUNKIE! No shame in that right?! I’m always brewing up ways to come up with treats each week that I can reach to when my cravings hit that include some of my favorite products. When I was browsing in my pantry, I came up with the FABULOUS idea of a Triple-C Cookie – Cinnamon, Collagen & Coconut Cookies! I’m obsessed with cinnamon, and who doesn’t love collagen and coconut?!

One product I’ve been absolutely loving lately has been the Vital Proteins Coconut Collagen Creamer. I also always try to include a higher fiber base to help keep the net carbs low as well. In this case, I included my pulverized GG Fiber Sprinkles

If you haven’t hopped on the GG Fiber bandwagon just yet, I highly suggest doing so! Like my girl Lauryn from The Skinny Confidential always says, use GG Fiber as a vehicle! Pair the fiber with protein or utilize it in a different way to make healthy swaps! My favorite ways to use my GG’s are for GG toasts, adding pizza sauce and cottage cheese for mini pizzas, and of course pulverizing the sprinkles to use as a flour substitute!

Coconut, Collagen & Cinnamon – A Winning Trio!

Coconut Collagen Cinnamon Cookie Recipe PurelyPopeSo I’ve already covered why I LOVE the GG’s in this recipe (can’t get enough FIBER) – but let’s touch on the other ingredients as well, shall we?!

  • Coconuts (oil, flour, flakes): Coconut flour itself is high in fiber, which we love. Additionally, adding coconut flour to baked goods lowers the glycemic index which is a measure of the rate that a food increases blood sugar. Coconut oil is a heart healthy fat source and the coconut flakes are also high in fiber and can act as a probiotic.
  • Collagen (creamer): Collagen has SO MANY benefits, but some of the most popular benefits are promoting glowing skin, strong hair, nails, joint and bone health!
  • Cinnamon: Who doesn’t love cinnamon really?! This is amazing for anti-inflammatory purposes and being an antioxidant. Check out this article from Shape Magazine for more info on the benefits!

As you know, I always like to share my preferred brands for my recipes – so here is what you will need before we hop right in! Vital Proteins Coconut Collagen Creamer, Navitas Organics Coconut Palm Sugar, Bob’s Red Mill Unsweetened Shredded Coconut Flakes, Bob’s Red Mill Coconut Flour, GG Fiber Sprinkles and Garden of Life Organic Extra Virgin Coconut Oil.

Ingredients

  • 3 Scoops Vital Proteins Coconut Collagen Creamer
  • 1/3 Cup Coconut Sugar
  • 1 Tbsp Unsweetened Shredded Coconut
  • 1/2 Cup GG Fiber Sprinkles, Pulverized
  • 1/4 Cup Coconut Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1/3 Cup Coconut Oil, Melted
  • 2 Organic Eggs
  • 1 Tsp Vanilla

Instructions

Now Let’s Get This Collagen Cookin’!

  1. First, preheat the oven to 350 – heat it up!
  2. Grab a large mixing bowl and combine all wet ingredients (melted coconut oil, eggs and vanilla)
  3. Next up, slowly mix in all of your dry ingredients (except for the coconut flakes) to the wet mixture
  4. Spray your cookie sheets with coconut oil
  5. Once the mixture is looking blended, begin to roll onto small balls, my batch made about 20 – 25 cookies
  6. Place cookies on the sheets, and then top each with a sprinkle of the coconut flakes
  7. After coconut flakes are placed, used a fork to make grid lines and flatten each cookie (pressing the coconut into the cookies)
  8. Finally, bake these in the oven for about 8-9 minutes! Be sure to let them cool before storing so that they form together and don’t become crumbly.
