Simple Chimichurri Sauce!

I’m not sure about you, but I freaking LOVE a good simple Chimichurri sauce! It’s goes super well on pretty much anything, from a pasta to veggies to a dip, etc. It can pretty much do it all! And it’s so amazing to use if you have a garden of some sort to use up your herbs! Let’s dive in. 

Simple Chimichurri Breakdown

As I mentioned, this recipe is mostly all fresh herbs! It’s so refreshing and as Nick said, full of so many flavors! It’s amazing how much flavor you can add to things solely from elements from the earth! Let’s go through each one!

  • Parsley: This is your main ingredient and the bulk of the Chimichurri sauce. Parsley boosts your immune system, is a great diuretic, fantastic for bone health and overall a GREAT source of the ‘food as medicine’ principle I love to follow.  
  • Cilantro: Cilantro is amazing for lowering blood sugar, is super high in antioxidants and is said to assist in promoting good digestion and a healthy gut. 
  • Mint: Not only is it an internal deodorizer :), it also is a natural anti-inflammatory! Mint is amazing for your digestion, as well as being amazing for brain health. 
  • Garlic: Another great food for immunity as well! The compounds in garlic are also known to lower blood pressure too.
  • Lemon: As with a majority of these ingredients, it’s great for detoxifying as well as aiding in your digestion. 
  • Red Wine Vinegar: Red wine vinegar aids in weight loss and is also a great source to help balance blood sugar levels as well.

Ingredients

  • 1 cup parsley, finely diced
  • 1/4 cup cilantro, finely diced
  • 2 tbsp fresh mint, finely diced
  • 1 tbsp garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 lemon, juiced
  • 1 tsp red pepper flakes
  • Sea salt and pepper, to taste

Instructions

Chimichurri Time!

  1. Add all ingredients to a bowl.
  2. Mix well + top on your favorite veggies, meats, or pasta alternatives!

Notes

Store in the fridge!
