Vegan Caesar Salad
Did anyone else LOVE a good Caesar salad growing up? I know I did – it was like my gateway drug into salads when I was younger, LOL! I wanted to create my very own vegan Caesar salad dressing recipe that I could easily whip up on my own that would be super nutritionally dense and delicious! Let’s hop right into it!
Vegan Caesar Salad Break Down!
OK so obviously I include all of the dressing ingredients below, and I will link each ingredient for you so you know which I love. However, I also wanted to talk through the makeup of my salad and how I make it so decadent and filling. Here’s the deets:
- Salad Base: I love pairing this dressing with Lacinato Kale. It’s rough and it does super well with the thick dressing. The trick to making it how you get it in restaurants is cutting out the stem, chopping finely, washing and then massaging the kale very well. It should turn a bright green color and be a really great texture.
- Croutons: It’s not an amazing caesar without some delicious croutons, right?! I chopped up the ‘butt’ of a loaf of Base Culture paleo bread, sprayed it with avocado oil and popped it in the air fryer for 3 minutes. They turned out perfect! This was enough for (1) large salad (1 portion), but if you’re adding to the whole batch, I would do a few pieces.
- Protein: I added in Brami Beans Sea Salt+ Vinegar Lupini Beans. These are amazing and one of my favorite vegan protein options. Check out my full list of faves here.
- Extras: Of course I added in a little bit of avocado for extra creaminess, as well as some capers – trust me on this! Adds a really yummy, salty taste to the salad.
As far as the specific products I used for this recipe, I’ve been loving this nutritional yeast, My Sexy Veggies Caesar Style Tahini and Lakanto Maple Syrup if you want a totally sugar free dressing.
