3 Ingredient “Sunday” Cookies

These 3 ingredient “sunday” cookies are so delicious and the most simple cookies you’ll ever meet! They’re super versatile and you can make them with any nut/seed butter or sweetener that you have on hand. Everyone will love them as well!

3 Ingredient Cookies

As I mentioned, these cookies are super simple, and the best part is that they’re super quick, and insanely delicious. You probably already have all of the ingredients in your pantry already too! Let’s break it down:

  • Nut Butter: Any nut butter will work for this recipe, so pick your poison and go with it! I personally used Nuttzo Chocolate Power Fuel, but you could use peanut butter, almond butter, cashew butter, tahini, sunflower butter, etc. The possibilities are endless! As with all nut butters, I always prefer to choose organic if possible, and choose a nut butter solely with nuts. Lot’s of them will have added sugar or oils which is not necessary!
  • Sweetener: To sweeten this up, I used Allulose sweetener. It’s a relatively new sweetener to the market, but it’s derived from the sugar in fruits and fiber. I personally love the Whole Earth Allulose Baking Blend, and it’s a 1×1 sugar substitute for baking which is great. 
  • Binder: For the binder for the recipe, I simply used one egg. I haven’t tried a vegan sub, but you could test out a chia egg or tapioca starch!

These cookies will vary in macronutrients depending on what nut butter and sweetener you use, but utilizing the items I mentioned (Nuttzo Chocolate Power Fuel & Whole Earth Allulose Baking blend), they come in at 108 calories per cookie, 9g healthy fat, 18g carb, 2g fiber, 1g sugar and 4g protein!

Ingredients

  • 1 c nut butter
  • 1 c allulose or monk fruit sweetener
  • 1 egg

Instructions

Sugar Cookie Time!

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in large bowl.
  3. Roll into balls, making about 14 cookies.
  4. Place on parchment paper lined baking sheet (I did 2 ✌️).
  5. Press two ways with a fork.
  6. Bake 13-15 min!
