Best Ever Bell Pepper Nachos

These are NACHO average nachos! See what I did there?! LOL..love me a good pun! These bell pepper nachos are truly the best ever and can be enjoyed as a main dish or as a party app, the whole crowd will love, I promise! They’re an amazing way to sneak in extra veggies while still getting a ton of flavor! Let’s break it down..

Bell Pepper Nacho Breakdown

When you think nachos, you typically think hmmm maybe not the best plant focused option. However, that’s the beauty of being able to make elevated options at home! I’m a big believer that eating healthy never has to be boring, so let’s dive into what you need!

  • Nacho Base: Of course the name, ‘bell pepper nachos,’ gives this away, but we used bell peppers instead of tortilla chips. Nothing wrong with chips, but I always love to pack in extra veggies and bell peppers are an amazing source of fiber and Vitamin C!
  • Meat: I used Beyond Meat plant based ground ‘beef’ for our nachos, however you can use any ground meat you desire. If you do opt to go with an animal protein, choose a grass finished, organic ground beef.
  • Extra Veggies: You know I always have to sneak in an extra pack of veggies, so I mixed in Eggplant and fire roasted tomatoes. I know they don’t sound like your typical nacho ingredient, but it adds such a delicious flavor and texture.
  • Spices: I simply used a packet of organic taco seasoning for this, however, you could also use a mix of 1/2 tbsp chili powder, 1/2 tbsp smoked paprika and 1/2 tbsp cayenne.

Bell Pepper Nacho Specifics

This batch of nachos could serve around 4-5 people for dinner OR up to 8-10 if you’re having it as an appetizer. Based on 5 servings and using the plant based beyond beef, this recipe comes out to 274 calories, 17g fat, 16g carbs, 5g fiber and 18g protein.

Ingredients

  • 4 bell peppers, diced into ~2 in squares
  • 16 oz. plant based or regular beef
  • 1 cup eggplant, diced
  • 1/2 red onion, diced
  • 1 packet organic taco seasoning
  • 1/2 c fire roasted tomatoes
  • 1 tbsp avocado oil
  • Toppings of choice: cilantro, jalapeño, avocado, onion, tomato, etc.!

Instructions

Nacho Time!

  1. Preheat oven to 375.
  2. Place peppers evenly on a parchment paper lined baking sheet. Roast for 5 mins.
  3. While peppers are roasting, add oil, then all veggies and meat to a skillet.
  4. Once well cooked, add in seasoning and fire roasted tomatoes.
  5. Top filling on top of bell peppers and cook for another 10 minutes.
