Creamy Sweet Potato Pasta

IDK about you, but Fall just makes me crave everything root veggies! They ground me through the change of seasons and are hearty to keep ya nice and warm too! This creamy sweet potato pasta sauce is so delicious and perfect for a fall meal! I add in some tips to make it extra delicious below as well.

Creamy Sweet Potato Pasta Specifics

This sauce is super simple and is truly a one pan meal, too! You of course could puree the sweet potato yourself, but I prefer buying in canned and done for me. It’s still super affordable AND saves time, and time = money right?! Let’s dive in deeper..PurelyPope Creamy Sweet Potato Pasta

  • Sweet Potato: As I mentioned, I used a canned sweet potato puree..I always try to get organic if you can make it work budget wise, but if not, no worries at all! If you can get the can BPA free, even better.
  • Spice it up: For this recipe, I used a combination of minced garlic, sweet onion, red pepper and of course salt and pepper to season it. It adds great flavor. 
  • Add some greens: You knew this was coming, right?! For this specific dish, I added air fried broccolini..but you can also throw in some spinach to the sauce or add in asparagus too!
  • The pasta!: Of course we can’t forget about the pasta! For this dish, I used Palmini Pasta, which is made solely from hearts of palm, yet another veggie! You can soak it in almond (or any nut) milk in advance to minimize the acidity. You can grab it on amazon! I absolutely love it!
  • Creamy-Ness: For the creamy portion of this, I chose to use the Kite Hill Chive Cream Cheese which adds great flavor, and of course, creaminess!
  • Protein: For this dish, you can add in any protein you prefer (chicken would work well or you could do a ground turkey or a tempeh or hemp hearts for a vegan option.
  • Special touches: I added in some hemp seeds (as mentioned above) for protein, as well as some goji berries and it was AMAZE!

Creamy Sweet Potato Pasta

Ingredients

  • 1 can Palmini pasta
  • 1/2 c sweet potato puree
  • 1/4 sweet onion, diced
  • 2 tbsp vegan chive cream cheese
  • 1 tsp garlic, minced
  • 1 tsp red pepper flakes
  • Salt & pepper, to taste
  • Optional: ~1 c cooked green veggies of choice

Instructions

Sweet Potato Pasta Time!

  1. Start off by adding garlic and diced onion to a non stick pan. Allow to cook on medium heat until onions start to turn into a golden color.
  2. While garlic/onion is cooking, prepare Palmini pasta by first rinsing it in a strainer, and then placing it in a bowl of nut milk. allow to soak for ~10-15 minutes (until you add into sauce.)
  3. Then, add in the sweet potato puree, chive cream cheese, red pepper, salt and pepper. 
  4. Mix sauce well, then toss in the drained Palmini pasta and mix well. 
  5. Serve with favorite protein and enjoy!
