Crunchy Paleo Chocolate Chip Cookies

Is there anything better than a freshly baked chocolate chip cookie? For me, it truly takes it out of the park when they’re paleo, sugar free, grain free and dairy free – which these are! My sweet tooth is no joke, and these totally fulfill that. Don’t get me wrong, I love a chewy chocolate chip cookie, but there’s something special about an extra crunchy one too, don’t ya think?! Let’s get right into it!

Paleo Sweetness Done Right

Something that is always taken into consideration in my baking is what type of sweetener I’m going to use. In the wellness space, it can be confusing to choose from all the options from agave to maple syrup to coconut sugar, etc. Let me give you some perspective on what to look for. 

My primary concern when choosing a sweetener is the glycemic index. To give you some insight, Maple Syrup has a Glycemic Index of 56, where Coconut Sugar rings in at 35, Agave at 15 and Monk Fruit at 0. Why is this important you ask? The GI is an insight on how quickly the carbs in a food will cause your blood sugar to rise after eating. Afterwards it would affect how quickly the carbs convert to glucose in your body. The lower the glycemic index in a food, the slower they digest which allows gradual blood sugar and insulin levels.

Paleo Cookie Specifics 

First of all, check out my baking staples on my Amazon page here and it will get you off on the right foot. Some things you will find on there are my favorite grain free baking bases such as Almond Flour and Coconut Flour. And then of course some Monk Fruit Sweetener as well, of course 🙂 

Secondly, I always like to go for chocolate that is botanically sweetened as well – some brands like I like are Lakanto Chocolate Chips and Lily’s Chocolate Chips. Finally, if you’re really feeling on a baking roll, whip up these (no) sugar cookies too!

Ingredients

  • Wet Ingredients:
  • 1/2 c coconut oil, melted
  • 2/3 c lakanto golden monk fruit sweetener
  • 1 tbsp lakanto maple syrup
  • 1 tsp vanilla
  • 1 egg
  • Dry Ingredients:
  • 1/4 c almond flour
  • 1 tbsp coconut flour
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup dairy free, sugar free chocolate chips (I like Lakanto or Lily's)

Instructions

Pass the Cookies!

  1. First, preheat your oven to 350. 
  2. Mix coconut oil, golden monk fruit sweetener, vanilla, egg and maple syrup in a bowl. 
  3. In a separate bowl, mix the dry ingredients together including the almond flour, coconut flour, baking powder, baking soda, cinnamon, chia seed, sea salt and chocolate chips. 
  4. Gradually mix the dry and wet ingredients together in a bowl, then let sit for 10-15 minutes. 
  5. Get a baking sheet (or two) and line with parchment paper. Then, evenly distribute the cookies, the batter should make around 16. They do spread so leave a good amount of space in between cookies!
  6. Bake the cookies for ~12 minutes and let cool, then enjoy!
