This banana bread is also gluten free, refined sugar free, and all plant based. I used the brand new Ancient Nutrition Chocolate Plant Protein Powder

Vegan Banana Bread Breakdown

This vegan banana bread gets a ton of the sweetness from the bananas, and it’s just as good for breakfast as it is for dessert – the ingredients are that clean! I absolutely love the double chocolate aspect of this as well from the chocolate protein powder and the Lily’s Dark Chocolate Bar! Let’s break it down!

  • Flour: For the bulk of this bread, I used almond flour – it’s a high protein and high fiber flour which I love and makes it super filling and delicious!
  • Sweetener: To sweeten this up, I used the combination of the banana and the monk fruit. Monk fruit is my favorite sweetener because the glycemic index is 1, meaning it’s not going to spike your blood sugar!
  • Chocolate: The chocolate in this recipe comes from the Lily’s Dark Chocolate Bar which is both vegan and stevia sweetened (sugar free), as well as the Ancient Nutrition Plant Based Chocolate Protein Powder, which adds in some protein as well!

Ingredients

  • 3 Chia Eggs (3 tbsp chia seeds + 6 tbsp water)
  • 2 bananas, mashed + 1/2 banana sliced lengthwise for topping (optional)
  • 1 c almond flour
  • 1/2 c Ancient Nutrition Chocolate Plant Protein
  • 1/2 c coconut oil, melted
  • 1/4 c monk fruit sweetener
  • 1/4 c unsweetened almond milk
  • 1 vegan dark chocolate bar, chopped
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Sprinkle sea salt

Instructions

Let’s Get This Bread!

  1. Preheat the oven to 350.
  2. Line bread pan with parchment paper.
  3. Mix all wet ingredients besides in a bowl and set aside.
  4. Gradually add in the dry ingredients and mix well.
  5. Add in chopped chocolate and mix well.
  6. Distribute batter in lined bread pan. I used 9″ x 5″.
  7. Optional: top banana bread with 1/2 banana sliced lengthwise
  8. Bake for 45-55 mins. Edges should start to be golden!
