Vegan Peach Cobbler

OK when I think of summer, I immediately think of a big juicy peach! Specifically, I love a good vegan peach cobbler! This recipe is super simple and calls for just a few ingredients, most of which you probably already have. I should also mention that it’s vegan (duh), gluten free and refined sugar free as well! But I promise – it’s FULL of peachy goodness flavor! 

Vegan Peach Cobbler Breakdown

This peach cobbler is insanely easy and so yummy, the perfect summer dessert! Let’s dive in and break down the ingredients:

  • Crust: For the crust, I did a combination of almond flour, as well as dates to sweeten the crust. We also added in a bit of coconut oil for some healthy fats and to bind the crust together. 
  • Filling: For the filling, we did the peaches, as well as a bit of coconut oil and some lemon juice to brighten the flavor a bit. For sweetness, we added some monk fruit and cinnamon to balance the blood sugar and add some delicious flavor. Monk fruit is my favorite sweetener because the glycemic index is 1, meaning it’s not going to spike your blood sugar!
  • Topping: For the topping, we added a bit of coconut sugar and almond flour. It adds a bit of a crumble, sweetness and delicious texture.

Ingredients

  • CRUST:
  • 1 c almond flour
  • 3 dates, pitted (OR 3 tbsp maple syrup)
  • 1/4 c coconut oil, melted
  • 1 tsp pure vanilla extract
  • FILLING:
  • 4 peaches, sliced
  • 3/4 c monk fruit
  • 1 tbsp cinnamon
  • 1 tbsp coconut oil
  • 1 tbsp lemon juice
  • TOPPING:
  • 1 tbsp coconut sugar
  • 1/4 c almond flour

Instructions

Peachy Keen!

  1. Preheat oven to 350.
  2. Combine all crust ingredients in a food processor.
  3. Cover dish (I used 9″ circle) with parchment paper.
  4. Pack crust in well throughout the dish with hands.
  5. Bake crust for 10 minutes.
  6. While crust is baking, add peaches, monk fruit, cinnamon, coconut oil and lemon juice in a skillet.
  7. Allow peaches to saute, stirring frequently for ~10 minutes.
  8. Add peaches on top of crust.
  9. Mix coconut sugar & almond flour topping together.
  10. Top peaches with topping.
  11. Bake for 10 minutes.
  12. Turn to broil for 1 minute to allow the topping to golden brown.
  13. Allow to cool and enjoy!
