Granola Butter Chocolate Chunk Cookies

These cookies were actually a beautiful mistake 🙂 don’t you love it when that happens?! These Granola Butter Cookies with chocolate chunks are absolutely to die for, clean and super minimal ingredients. Truly, my niece London could make these they’re so easy!

Healthy Cookie Swaps

Whenever you typically hear about cookies, our brains usually go to an unhealthy belief. “There is no way a cookie can taste good and be healthy.” But I’m here to debunk that myth! And it also doesn’t need to be super complicated either. Here is how I typically go about making any healthy (and better for you) dessert:

  • Flours: Swap from blanched white flour to a more complex, gluten free flour such as almond flour, coconut flour, oat flour or cassava flour.
  • Sweeteners: Swap from sugar to maple syrup, honey, monk fruit or stevia.
  • Chocolate: Swap from regular chocolate (such as nestle) to a sugar & diary free chocolate such as Hu Kitchen or Lily’s Chocolate.
  • Fats: Instead of vegetable oils or shorteners, use things such as nut butters, coconut oil & MCT Oil.
  • Eggs: If you’re vegan, you can sub with a chia egg, flax egg or apple sauce works well too.

And that’s pretty much it! I always google to see what I can swap in and out and also what the measurements should be in terms of swapping almond flour for regular flour, etc.

Granola Butter Cookie Specifics

The most important part of these cookies of course is the Vanilla Granola Butter. I’m sure they would taste delish with another nut butter, but if you go that route, add in a tsp of pure vanilla extract as well. In addition, you could easily make these nut free for a kiddo party by subbing out the almond flour for oat flour. Finally, be sure to stock up on my fave monk fruit maple syrup to sweeten the granola butter cookies up!

Ingredients

  • 1/4 c coconut oil
  • 1/4 c monk fruit maple syrup
  • 1/4 c chia seeds
  • 1/4 c vanilla Kween & Co granola butter
  • 1 c almond flour
  • 1 tsp baking powder
  • 1 vegan dark chocolate bar, chopped

Instructions

Cookie Time!

  1. Mix coconut oil, maple syrup, chia seeds & granola butter. Let mixture sit for 5 minutes.
  2. In a different bowl, mix almond flour + baking powder. 
  3. Chop chocolate bar. 
  4. Mix the wet & dry ingredients together, then fold in chocolate bar. 
  5. Preheat oven to 350.
  6. Cover & refrigerate cookie dough for 15 minutes.
  7. Roll dough into ~15 balls and press flat onto a greased cookie sheet. 
  8. Bake for 18-20 minutes.
