Grinch Superfood Banana Muffins
We’re into the holiday baking people and I’m oh so excited! I always love a good festive recipe and this is not an exception from that rule, ha! But obviously I had to incorporate SUPERFOOD into my banana bread muffins. These Grinch Superfood Banana Bread Muffins are grain & gluten free, sugar free, and packed with deliciousness.
I’m personally going to make them on Christmas morning, and maybe throw some chocolate it the mix to make them even more of a delicious healthy holiday treat! They could even make for a wonderful gift for someone if you package them cute, too!
Superfood Banana Bread: No Dye’s Required!
For some reason a lot of holiday baking always incorporates lot’s of festive colors, which I’m INTO of course! Something I’m not into though? FAKE SHIT. LOL. Apologies for the harshness, but I just think our food system is so corrupt and the fact that harmful chemicals can be sold as food is absurd. Here are the ingredients in the popular brand McCormick’s Green Food Coloring:
WATER, PROPYLENE GLYCOL, FD&C YELLOW 5, FD&C BLUE 1, AND PROPYLPARABEN (PRESERVATIVE).
Umm excuse me? Prop a para what? Simple rule of thumb? Don’t eat shit that you don’t know what the hell it is. Vani Hari, also known as the Food Babe, has made such amazing strides in getting food dyes removed from products in general, but here are some facts for you from one of her blog posts on the topics that I just find REMARKABLE and SHOCKING:
- Food dyes are man-made in a lab with chemicals derived from petroleum (a crude oil product, which also happens to be used in gasoline, diesel fuel, asphalt, and tar).
- Food dyes require a warning label in other countries outside the US. They have been banned in Norway & Austria and are being phased out in the UK and Europe.
- Yellow 5 and Yellow 6 are contaminated with known carcinogens (a.k.a. an agent directly involved in causing cancer).
- In regards to kids, who food dyes are primarily marketed to in products BTW: cause an increase in hyperactivity in children, negatively impact children’s ability to learn.
All of that being said, it’s even more crazy to me that food dyes are used in products that people actually consume because it’s so easy to NATURALLY color our foods. Want yellow? Use turmeric. Want green? Use Spirulina. Want red or pink? Use beet juice. The list goes on. Moral of this story: you can feel FREAKING GOOD about giving these to anyone that you love, because they’re colored with Spirulina, a SUPERFOOD that has ANTI cancer properties, reduce blood pressure, is nutrient dense, the list goes on & on.

Ingredients
- Wet Mixture:
- 2 bananas, mashed
- 2 eggs + 1 egg white, whisked
- 2 tbsp pecan butter (or any creamy nut butter)
- 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Yogurt Mixture:
- 2 tbsp plain vegan yogurt
- 1 tsp baking powder
- Dry Mixture:
- 1/2 c almond flour
- 1/4 c vegan vanilla protein powder
- 1 tbsp Spirulina
- Sea salt
- Handful of berries
Instructions
Bake the Banana Bread!
- Preheat your oven to 350.
- In a small bowl, add the baking powder to your vegan yogurt and set aside. The mixture will get bubbly and expand after a few minutes.
- In a separate bowl, mix together all of the ‘wet mixture’ items and mix well.
- Once the wet mixture is ready, mix in your yogurt mixture.
- Finally, fold in your dry ingredients and mix well.
- Grease your 7 muffin tins and cover with parchment paper.
- Distribute batter into each of the muffin tins.
- Add in berries to the top of each muffin.
- Bake for about 25 minutes and enjoy!
