Grain Free Pumpkin Granola

Let’s be honest, who doesn’t LOVE a good granola? Extra crunchy, salty and sweet all at the same time = pure heaven! This grain free pumpkin granola checks ALL of the boxes, and it’s actually super duper, extra freaking easy to make as well! It’s perfect for the fall season, and I’m also going to add in a humble brag here: it’s NICK APPROVED!

Like, extra Nick approved you guys. He tasted it and immediately goes “Don’t post this on your blog, you need to sell this, it’s crack.” LOL. Obviously I didn’t listen because I will ALWAYS share my recipes with you (whether I sell them pre-made in the future or not), but I did appreciate the sentiment!)

This grain free pumpkin granola is delicious on it’s own as a snack, on top of yogurt, or even with nut milk as a cereal. Combine with some berries and you’re good to go! It’s also an amazing snack that you can bring with you truly anywhere! Finally, if you’re not a pumpkin fan, you can always leave the pumpkin out, no worries!

Grain Free Pumpkin Granola

Ingredients

  • Dry Mixture:
  • 1/3 c whole cashews
  • 1/3 c slivered almonds
  • 1/3 c crushed pecans
  • 1/3 c shelled pistachios
  • 1/4 c chia seeds
  • 1/4 c ground flaxseeds
  • 2 tbsp acacia fiber
  • 1 tbsp cinnamon
  • 1 tsp pumpkin pie spice
  • Wet Mixture:
  • 2 tbsp golden monk fruit or coconut sugar
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tbsp pumpkin puree
  • 1 tsp vanilla extract

Instructions

Let’s Get this Granola!

  1. Preheat your oven to 275.
  2. Add all of your ‘dry mixture’ ingredients to a bowl and mix well. This includes all of the nuts, spices, acacia fiber, flaxseeds and chia seeds. 
  3. In a separate bowl, mix together all of the ‘wet mixture’ items and mix well. 
  4. Once the wet mixture is ready, drizzle it over the dry mixture and mix well. 
  5. Spray your baking sheet with avocado oil and line with parchment paper. 
  6. Gently lay all of your granola onto the try and make sure it’s flatly spread out. 
  7. Bake for about 30 minutes and enjoy!
