Pumpkin Pie Overnight Oat Chia Seed Parfait Details

The best part about this is how simple it is and that you most likely already have so many of the ingredients in your pantry too! Here’s what you’ll need…

  • Unsweetened Almond Milk: Or truly any milk you prefer! I chose New Barn which doesn’t have any gums or additives to the almond milk. If you prefer dairy, you can go that route as well!
  • Oats: You’ll want to get organic oats if you can as oats are one of the most heavily sprayed with glyphostphate!
  • Chia Seeds: Chia seeds are an amazing source of fiber and Omega-3’s as well, so you’re getting a good bang for your buck!
  • Coconut Yogurt: You can use any yogurt here, I’d recommend a plain or vanilla flavor – I used Cocojune unsweetened vanilla and it is to die for!
  • Monk Fruit: To add a touch of sweetness to the pumpkin pie overnight oat sitch, I used monk fruit which is a low glycemic sweetener. You can also use maple syrup if you prefer!
  • Pumpkin Puree: When buying this at the store, be sure you’re buying pumpkin vs. pumpkin pie puree which can be loaded with a ton of other ingredients. We just want the pumpkin here!
  • Pumpkin Pie Spice: If you can opt for an organic one, go for that! If you don’t have this on hand, you can use a mix of cinnamon, cloves, nutmeg, ginger and allspice.
  • Nut Butter: I love topping this with a heaping spoon of almond butter, but any nut butter will do!

Pumpkin Pie Overnight Oat Chia Seed Parfait

Ingredients

  • 1/2 c unsweetened almond milk
  • 2 1/2 tbsp oats
  • 2 tbsp chia seeds
  • 2 tbsp pumpkin puree
  • 1/4 tsp pumpkin pie spice
  • 1 tsp monk fruit sweetener
  • 1/4 c unsweetened vanilla coconut yogurt or yogurt of choice
  • 1-2 tbsp nut butter

Instructions

Pumpkin Pie Oat Situation Time!

  1. Add almond milk, oats (2 tbsp), chia seeds, pumpkin and monk fruit to a mason jar. Mix until well combined.
  2. Top the mixture with coconut yogurt and remainder of oats. Cover and let sit overnight or for a few hours until expanded. 
  3. Once ready to eat, top with nut butter, mix and enjoy!
