Overnight Oats Details

I’m very specific when putting together my oats to ensure that they will balance your blood sugar and keep you full throughout the morning! Here’s the killer combo, starting with the most important:

  • Hemp Hearts: More specifically, Eaton Hemp Hearts, which are my favorite and only brand I will use. They’re a complete source of plant protein, 10g per every 3 tbsp to be exact! They’re also an amazing source of Omega-3’s and fiber as well. Not to mention they’re organic, NON-GMO and truly farm-to-table too, being farmer-owned.   • Liquid Base: For the base, we use a combination of unsweetened almond milk with a vegan coconut yogurt. I personally love the GT’s Cocoyo, which I grab at whole foods, because it also has probiotics as well which is great for the gut!

Peaches & Cream Overnight Oats

Ingredients

  • 1 peach, cored & diced (leave 1/2 aside)
  • 1/3 c unsweetened nut milk
  • 1/3 c coconut yogurt
  • 1/4 c oats
  • 1/4 c @eatonhemp hemp hearts
  • 1 tbsp chia seed
  • 1 tbsp flaxseed meal
  • 1 scoop vanilla collagen or protein powder (optional)
  • 1/2 tsp cinnamon

Instructions

Peaches & Cream Time!

  1. Simply mix all ingredients with the exception of 1/2 the peach & 1/4 tsp of the cinnamon. Combine in a mason jar or container & allow to marinate for ~2 hours (overnight preferred!)
  2. When you go to serve, use the 1/2 peach, the remainder of the cinnamon & a touch of oil and sauté on medium heat until browned.
  3. Serve sautéed peaches on top of oatmeal and enjoy!
