Looking for a fun new breakfast idea? Well, look no further because these carrot cake overnight oats are not only delicious, but they’re packed with nutrients too! They’re also insanely simple to make and great for meal prep, kids, etc.!

Overnight Oats Details

I’m very specific when putting together my oats to ensure that they will balance your blood sugar and keep you full throughout the morning! Here’s the killer combo:

  • Liquid Base: For the base, we use a combination of unsweetened almond milk with a vegan coconut yogurt. I personally love the GT’s Cocoyo, which I grab at whole foods, because it also has probiotics as well which is great for the gut!
  • Fiber & Protein: We’re getting fiber from the oats, the hemp hearts, flaxseed meal & collagen powder! The collagen is totally optional, but if you want to grab some, I recommend the unflavored ancient nutrition multi-collagen. You can use code PURELYPOPE20 for 20% off your purchase.
  • Carrots: The carrots provide even more fiber (hello fiber rich carbs!). and they also provide an excellent source of vitamin C. 
  • Fat: You’re getting healthy fats and amino acids from not only the hemp hearts and flaxseed meal, but also the vegan cream cheese as well, which adds an extra creamy taste!

Carrot Cake Overnight Oats

Ingredients

  • 1/3 cup plain coconut yogurt
  • 1/4 cup rolled oats
  • 2/3 cup unsweetened almond milk
  • 2 tablespoon ground flax meal
  • 2 tbsp hemp hearts
  • 1 scoop unflavored collagen powder (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tsp maple syrup
  • 1/2 c shredded carrots
  • 1 tbsp plain cream cheese, softened
  • 1 tbsp raisins
  • 1/2 teaspoon ground cinnamon
  • 1/4 c pineapple, for topping

Instructions

Overnight Oats Time!

  1. Mix all ingredients besides pineapple in a mason jar or Tupperware.
  2. Top with pineapple.
  3. Cover and allow to sit in the fridge for a minimum of 4 hours, or ideally overnight.
  4. Enjoy!
