Maple Tahini Fall Harvest Salad

If you’re looking for the perfect fall harvest salad, then look no further! This recipe, paired with the homemade maple tahini dressing is simple, yet packed with flavor. It is warming and dynamic, as well as incredibly easy to make! Let’s go through the details..

Fall Harvest Salad Details

As I mentioned, this salad has few different (important) parts that bring the flavor! It’s also packed with amazing plant based protein, thanks to the Eaton Hemp Hearts, too! Here’s what you’ll need: 

  • Hemp Hearts: More specifically, Eaton Hemp Hearts, which are my favorite and only brand I will use. They’re a complete source of plant protein, 10g per every 3 tbsp to be exact! They’re also an amazing source of Omega-3’s and fiber as well. Not to mention they’re organic, NON-GMO and truly farm-to-table too, being farmer-owned. By adding these into the salad, we add a great amount of plant-rich complete protein to the dish. You can use code ALYSIA20 for 20% off anything on their website. 
  • Roasted Veggies: Seeing as this is a seasonal, Fall harvest salad, you’re welcome to interchange these veggies with whatever you have on hand. The recipe recommends a mix of butternut squash, onion and bell pepper, but other veggies that could suffice include kaboocha squash, acorn squash, eggplant, etc.!
  • Dressing: For the dressing, we make a homemade, simple dressing with a combination of Tahini, Extra Virgin Olive Oil, Apple Cider Vinegar, Maple Syrup + salt/pepper. This adds an amazing blend of heart healthy fats into the dish!
  • Extras: I always believe that the extras MAKE the salad, IMO. For the extras in this dish, we use a combination of Medjool Dates and crushed pistachios, but you could also use dried cranberries and/or pumpkin seeds if you prefer!

Maple Tahini Fall Harvest Salad

Ingredients

  • SALAD:
  • 1 head kale, stems removed, massaged & diced
  • 1/2 c pomegranate seeds
  • 1/2 c pistachios, crushed
  • 1/2 c Eaton hemp hearts
  • 4 medjool dates, pitted & diced
  • ROASTED VEGGIES:
  • 1 tbsp avocado oil
  • Salt & pepper, to taste
  • 1 red onion, peeled & cubed
  • 2 c butternut squash, diced
  • 1 bell pepper, diced
  • DRESSING:
  • 1/4 c tahini
  • 1/4 c Apple cider vinegar
  • 1/4 c olive oil
  • 2 tbsp maple syrup
  • Salt and pepper, to taste

Instructions

Harvest Salad Time!

  1. Preheat oven to 400.
  2. Toss the veggies for roasting in the avocado oil, salt & pepper & lay on a parchment lined baking pan.
  3. Roast veggies for 25-30 mins, then allow to cool.
  4. While veggies are cooling, mix dressing by whisking all ingredients together.
  5. Toss roasted veggies, salad ingredients & dressing in a large bowl & enjoy!!!
