Healthy Pumpkin French Toast

Let me start off by saying, I made this once and then Nick requested it 3 days in a row after, LOL! That being said, I have no doubt that you’ll LOVE this healthy pumpkin french toast recipe. It’s insanely simple and PERFECT for a cozy fall breakfast. Talk about delish!

Pumpkin French Toast Details

This pumpkin french toast is very simple, but there are a few aspects of it that I love to point out to ensure that it not only tastes amazing, but makes you FEEL amazing too! Here’s the details:

  • Bread: I personally love going for a bread that has a great fiber content, unrefined grains if any or is sprouted so that it’s easier on my digestion. You can use whatever bread FEELS good to you, because remember – we’re all bio-individual. Some of my favorites include Royo Bread, Sola, Base Culture and Food for Life Baking
  • Pumpkin: Of course! This recipe calls for pumpkin puree. I prefer to get organic, so if you can, go that route. Be sure that you’re buying just pumpkin puree and not pumpkin pie filling – totally different!
  • Maple Syrup: I love a good organic pure 100% maple syrup. I usually get mine from Costco, but you can find some at your local grocery store as well. If you want to go for a completely zero glycemic option, you can try this syrup by Lakanto or Birch Benders, which is sweetened with Monk Fruit.

Pumpkin French Toast

Ingredients

  • 4 slices bread of your choice
  • 2 tbsp grass-fed butter, ghee or vegan butter + more for serving if desired
  • 2 eggs
  • 1/4 c organic pumpkin puree
  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin spice
  • +Maple syrup for serving

Instructions

French Toast Time!

  1. Heat a large skillet with 1 tbsp of the butter to medium/high heat.
  2. Add eggs, pumpkin puree, vanilla extract and pumpkin spice to a shallow large bowl and whisk until well combined. 
  3. Dip the first 2 pieces of bread in the egg/pumpkin mixture, flipping to ensure both sides are coated well. 
  4. Place each piece in the skillet, and allow to cook on each side until golden brown (about 3-5 minutes per side), then flip.
  5. Repeat for the following pieces. 
  6. Serve with butter, maple syrup + other desired toppings + enjoy!
