I don’t know about you, but I’m a HUGE fan of sweets for breakfast. Especially chocolate! That’s why I’m so excited to share these flourless chocolate protein waffles! They’re packed with protein, fiber and are insanely delicious! Let’s get into it. 

Flourless Chocolate Protein Waffles Breakdown!

These waffles are too damn good! I’ve been making them on repeat since I first made the recipe and they’re so amazing. They’re also insanely filling too! Here’s why:

  • Protein: In these waffles, I used a combination of eggs and a chocolate protein powder for the protein. I specifically used the Ancient Nutrition Multi-Collagen Chocolate Protein Powder. It’s delicious and has the best taste!
  • Fiber: As you well know, I’m a big fan of fiber! It’s super important to keep our gut healthy, keep our digestion regular and keeping us full. I used a combination of Acacia Fiber, Flaxseed Meal, Chia Seeds and Cauliflower to up the fiber of these waffles. All combined, it gets us about 17g fiber per serving!
  • Healthy Fats: In addition to the protein and fiber, there are also healthy fats in this recipe. The healthy fats come from the Flaxseed Meal and Chia Seeds. Combined, we’re able to get 15g of healthy fat per serving!

Ingredients

  • 1 c riced cauliflower
  • 3 egg whites
  • 1 full egg
  • 1 serving chocolate protein powder
  • 1/4 c chia seeds
  • 1/4 c flaxseed meal
  • 1/4 c nut milk
  • 2 tbsp acacia fiber
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions

Waffle Time!

  1. Add all ingredients to a blender. Blend well until completely combined.
  2. Cook in either a waffle iron or skillet for pancakes for about 3-5 minute each side or 8 min total. This will vary based on your method of cooking. Grease the skillet or waffle maker prior.
  3. Enjoy with your favorite toppings!
