Healthy Cake Pops: St. Patty’s Edition!
Alright, these healthy cake pops couldn’t be easier OR more delicious. Anyone ever had the cake pops from Starbucks? Well these taste JUST like them, and they’re packed with superfoods too, it’s a win-win! Let’s dive in!
Healthy Cake Pop Deets
As I mentioned, these are EASY – you know I love simplicity. And the fact that these are healthy cake pops makes them all the more enjoyable too. Here’s what you’ll need:
- Cake Mix: My recommended cake mix is the vanilla one from Simple Mills. Not only is it grain, dairy and refined sugar free, but it’s FLAVORFUL! It’s insanely moist and delicious. I recommend using avocado oil to add to the cake. More on that in the directions!
- Frosting: Again, for the frosting, I chose to use Simple Mills Vanilla Frosting, which is gluten free, dairy free and refined sugar free too. Count me in!
- Spirulina: You were probably wondering where the green was coming from, right?! Well there’s my secret! It comes from one of my favorite superfoods, Spirulina. No need to use artificial fake dies. You won’t even taste this and you will get TONS of benefits such as being an anti-inflammatory and high in anti-oxidants.
- White Chocolate: For the white chocolate coating, I chose to use Lily’s white chocolate chips. They’re not dairy free, but they are refined sugar free, which I love!
- Green Drizzle: For the drizzle, I used a combination of coconut butter, coconut oil and you guessed it – Spirulina! I find this makes for a creamy taste/texture on the cake balls.

Healthy Cake Balls!

Ingredients
- Cake Balls:
- 1 Box Simple Mills Vanilla Cake Mix
- + 3 eggs, 1/3 c water, 1/3 c oil, & 1 tbsp vanilla extract
- 1 tbsp spirulina
- 1 jar (10 oz.) simple mills vanilla frosting
- Coating & Drizzle:
- 1 1/2 c white chocolate chips + 1 tbsp coconut oil
- 1/4 tsp Spirulina to make it green
- 1/4 c coconut butter
- 2 tsp coconut oil
Instructions
Let’s Have a (Cake) Ball!
- Follow cake directions according to the box.
- Once cake is baked, allow it to cool and crumble it completely in a large bowl.
- Add in frosting to cake crumbles and mix well.
- Begin rolling cake into balls, I used an ice cream scoop to make them all even. Place the balls on a parchment paper lined tray. This will make around 25-30 cake balls.
- After balls are rolled, place in the refrigerator for about 2 hours, then move to the freezer for 10 minutes.
- After moving balls to the freezer, prep the white chocolate with the coconut oil by melting in the microwave in 10-15 second increments, stirring in between and making sure not to burn it.
- Once melted, coat all of the cake balls in the white chocolate and place back on the parchment paper. Freeze again for 10 minutes.
- While freezing, prep the coconut butter mixed with coconut oil using the same method as the white chocolate. Mix in the spirulina after its melted.
- Once 10 minutes has passed, get the cake balls out and drizzle with a fork the green coconut butter mixture. Place in the freezer again for about 5-10 minutes.
- Then enjoy! Store in the fridge.
