Low-Carb, Veggie-Heavy Turkey Chili!

I don’t know about you, but every Fall, I look forward to making Turkey Chili! It’s such a heart warming dish that is so filling and decadent. It’s like, you can’t believe it’s healthy – but it is!! This specific chili is LOADED with veggies, protein and fiber, so it will definitely keep you full and have you feeling satisfied through the colder months.

This veggie chili has a TON of goodies, including cauliflower rice. It helps with bone health and helps strength your immune system. Additionally,  I chose to use a 99% lean Organic Ground Turkey. You could also do ground beef or a plant protein.

Finally, I of course decided to add in extra, not so common for traditional recipes, veggies into this, duh! The baby carrots give it a nice little crunch, while the zucchini adds a fun volume and of course additional fiber/nutritional benefits as well.

Chili Specifics 

I love prepping this on a Sunday and having ready for lunches throughout the week. It’s the perfect fall staple. Before we jump in, here is a list of the specific products I prefer to use for the recipe: Muir Glen Fire Roasted Crushed Tomatoes, Bare Bone’s Chicken Bone Broth and Simple Truth Organic Ground Flax Seed Meal.

Ingredients

  • Chili Ingredients:
  • 1 lb 99% Lean, Organic Ground Turkey Breast
  • 1, 16 oz. Can Black Beans, Rinsed & Drained
  • 1, 14.5 oz. Can Crushed Tomatoes, Fire Roasted
  • 1 Cup Organic Chicken Bone Broth
  • 1 Cup Baby Carrots, Chopped
  • 1/2 Cup Red Onion, Diced
  • 1 Medium Zucchini, Spiralized
  • 2 Cups Cauliflower Rice
  • 1 Bell Pepper, Diced
  • 3 Tbsp Flaxseed Meal
  • 1 Tsp Chili Powder
  • 1 Tsp Cumin
  • 1 Tsp Cayenne
  • 1 Tsp Onion Powder
  • Salt & Pepper to Taste
  • Toppings:
  • Jalepeno, Sliced
  • Avocado, Sliced
  • Red Onion, Diced
  • Radish, Sliced

Instructions

It’s Chili Time!

  1. In a sauté pan, cook your turkey while simultaneously cooking your veggies in the pot you will use for the chili.
  2. In a sprayed chili pot (I used EVOO spray), add in all of your vegetables (cauliflower rice, carrots, pepper, onion, zucchini) and sauté on low/medium for about 10 minutes.
  3. Once your turkey is cooked, add in the turkey, along with the crushed tomatoes, rinsed black beans, flax seed, and bone broth to your chili pot. Also add in all seasonings here.
  4. Stir the entire mixture well and allow to simmer on low heat for about 2 hours.
  5. Once all of the flavors have settled, enjoy with toppings of radish, avocado, red onion and jalepeno!
