Lately I’ve been a sweets FEEN – what’s new, right? But yesterday morning, I woke up craving something savory. Specifically, a savory, yet healthy bagel. A PURELYPOPE BAGEL! HALLELUJAH!  I was inspired the other day to buy a donut pan on Amazon, and it arrived just in time. For future – you can find the one I bought here, and it’s so CUTE. Comes with two trays, one in bright orange and one in bright pink. SOLD!  I already had the tray to do it, so I thought, why not whip up a quick bagel recipe? After all, I had TWO bottles of Trader Joe’s Everything But the Bagel Seasoning, what more do ya need?

No exaggeration, these bagels may just be my favorite recipe that I’ve made, EVER. They’re simple, savory, just a tad bit sweet, soft and pillowy on the outside and just the right crunch on the inside. I paired them with a high fiber veggie egg white omelette. You could pair them with some almond butter, cream cheese, eggs, etc. – the possibilities are endless!

The Better for You Bagel

Let’s break this bagel down a bit. You DO NOT need to be afraid of carbs, you just need to make more educated decisions and know how things work in your body. PS: I’m ALL FOR eating a regular bagel on occasion too, but these are just as delicious in my opinion and make me feel food too! Carbs don’t make you fat. When you eat carbs in excess, your body stores the extra carbs as glycogen which then gets converted into fat.

This is where the fiber comes in! Fiber is the part of the carbohydrate that is zero calorie and indigestible. AKA it won’t get stored as glycogen and get converted to fat. Fiber is a part of the carbohydrate, and the more fiber a carbohydrate has, the less net carbs it will be, as fiber cancels out the carbs. Pretty cool, huh? A traditional bagel packs 105g net carbs, while this bagel has only 3g net carbs – amazing or what?!

For this recipe, I love using the Bob’s Red Mill Protein Powder. Nutrition wise, one serving (2 mini bagels) comes out to 208 calories, 13g fat, 9g carbs, 7g fiber and 16g protein!

Ingredients

  • Wet Ingredients: 2 Eggs
  • 6 Tbsp Water
  • Dry Ingredients:
  • 1/4 Cup Bob's Red Mill Protein & Fiber Nutritional Booster (or any unflavored protein powder)
  • 2 Tbsp Almond Flour
  • 2 Tbsp Flax Seed Meal
  • 1/2 Tsp Baking Powder
  • Sprinkle Salt
  • Topping:
  • Trader Joe's Everything But the Bagel Seasoning

Instructions

Bagel Me!

  1. First, pre-heat your oven to 400.
  2. Then, coat your donut pan with coconut oil (I prefer spray so it’s even.) For this recipe, it makes (4) mini bagels, so you only need to coat four of the inserts.
  3. Mix in your wet ingredients thoroughly in a bowl so that the egg batter has bubbles.
  4. Slowly combine in each of the dry ingredients into the batter.
  5. Distribute the batter evenly throughout the four bagel inserts.
  6. Once tins are filled up and the batter is distributed, evenly sprinkle Trader Joe’s Everything But the Bagel Seasonng on the Bagels.
  7. Bake at 400 for 25 minutes.
  8. Enjoy!
