Vegan Dark Chocolate Bark

Anyone else a sweets feen?! Recently, I’ve been indulging non-stop. Given this, I’ve been making it a point to have a healthy treat on hand at all times. Sometimes that may just simply be a piece of Lily’s Dark Chocolate, while other times I decide to get fancy and make something like this Vegan Dark Chocolate Bark!

Lily’s Sweets also prides itself on being sweetened with Stevia in lieu of sugar. This is something I can get behind! The company itself has an amazing story and was actually named after a little girl, who was diagnosed with Brain Cancer. Since being founded, Lily’s has always donated a portion of their proceeds to charities – what is not to love about that? You can check out the full story here. 

One of the best parts about this bark is that you can get super creative with it. I had to add all of the goodies! I went for toppings that would add healthy fats, fiber and of course a little protein too!

Let’s Talk Vegan & Dairy Free Desserts!

I try to limit dairy in my daily routine, but it does happen to sneak in from time to time. That being said, for my desserts, I always like to try to keep it vegan when possible! Here are a few additional ideas for you of some of my favorite vegan dessert combos:

  • Dates & Almond Butter (V&DF): Slice the date in half, top it with raw almond butter (no added oils or sugar), and a little cinnamon.
  • Nice Cream (V&DF): Using frozen banana, combine with a date, cinnamon, almond milk and vanilla extract. I usually like to use Neda’s recipe from HealthyWithNedi here.
  • My Pumpkin Chocolate Chip Cookies (DF)

Vegan Dark Chocolate Bark Specifics

Before we jump in, here is a list of the specific products I prefer to use for the recipe: Lily’s Dark Chocolate Bar, Garden of Life Organic Coconut Oil, ChocZero Maple Syrup- or regular maple syrup, Fiber One, Manitoba Harvest Hemp Seeds and PB2 Original.

Vegan Dark Chocolate Bark

Ingredients

  • Bark Base:
  • 1 Lily's Dark Chocolate Bar
  • 1 Tbsp Coconut Oil
  • Toppings:
  • 1/4 Cup Fiber One
  • 1 Tbsp Crushed Almonds
  • 1 Tbsp Hemp Seeds
  • Handful Berries
  • Drizzle almond butter
  • Drizzle ChocZero or maple syrup

Instructions

Bark it Up! 

  1. First, combine the chocolate and coconut oil on low heat until melted and combined.
  2. Line 8×8 pan with parchment paper.
  3. Pour the mixture into a 8×8 pan.
  4. Let freeze for 5 minutes.
  5. Take bark out, add on your toppings
  6. Pop back in the freezer for a few hours until hardened.
  7. Enjoy!!
