Is there anything better than a good tot?! I think not. Also, can we pause to acknowledge how funny of a word ‘tot’ is? LOL. Anyways, coming up with this veggie tots recipe was SO FUN and I wish I would’ve doubled the batch, just saying – you may want to consider! Let’s dive int! 

Veggie Tots Break Down!

OK so these have some really FUN ingredients in them. One very important one that I attribute to a lot of the delicious flavor as well. One of my favorite parts of this recipe is that it does pack in the veggies, so the veggie tots are great if you have little ones (or significant others, lol) that need to get more veggies in! Let’s showcase each one!

  • Almond Flour Crackers: For these, I decided to use Simple Mills Almond Flour Cracker Crumbs. They have such an amazing flavor and very clean ingredients, which I love. You could totally sub in any grain free crackers, but these are my fave. Some other brands that I love are the Trader Joe’s GF Norwegian Crisp Breads and Healing Home Foods Crackers.
  • Nutritional Yeast: You all know I’m a sucker for Nutritional Yeast. It again adds such a great flavor – a cheesy flavor that’s dairy free and packed with protein too! I love this one
  • Veggies: Hence the name, veggie TOTS! Most tots use potatoes, which are great, but I wanted to use my fave all-purpose veggie, zucchini, mixed with a flavorful white onion.

Low Carb Veggie Tots

Ingredients

  • 1 large zucchini, grated with all moisture squeezed out
  • 1/4 c white onion, finely diced
  • 1/2 c almond flour crackers, pulverized into fine crumbs (I used simple mills)
  • 3 tbsp nutritional yeast
  • 2 eggs
  • Sea salt & pepper, to taste

Instructions

It’s Tot Time!

  1. Preheat oven or air fryer to 400 degrees. 
  2. Ensure that you’ve grated and squeezed out all excess moisture from the zucchini (you can do with a cheese cloth, nut milk bag or paper towels.)
  3. Add all ingredients to a bowl and mix well.
  4. Shape the tots (about the size of your thumb) into little rectangles and place on a baking pan lined with parchment paper and some sort of oil.
  5. Bake tots for 20 minutes for oven, or about 7-8 minutes on each side in the air fryer.
  6. After baking, allow to broil for 1-3 minutes to get crispy, keeping an eye on them not to burn.
  7. Enjoy!
