5 Ingredient Vegan Sugar Cookies

These vegan sugar cookies were created by myself and my nephew Kaden on a whim, and they turned out oh so good! They’re simple, healthy and great for the kiddos too! Best part? You probably already have all of the ingredients at your house to whip them up right away! 

Vegan Sugar Cookies Breakdown

As I mentioned, these cookies are not only simple and healthy, but they’re also kid approved! 

  • Flour: For the base of these cookies, I used almond flour – it’s a high protein and high fiber flour which I love and makes it super filling and delicious! The flour isn’t super absorbent which works well with baking too. You can typically use almond flour as a 1×1 sub with all-purpose flour.
  • Sweetener: To sweeten this up, I used the combination of vanilla extract and monk fruit. Monk fruit is my favorite sweetener because the glycemic index is 1, meaning it’s not going to spike your blood sugar like refined white sugar will, which has a glycemic index of around 65.
  • Sprinkles: For the sprinkles in these cookies, we used regular, old fashioned, full of sugar sprinkles. Life is about balance, after all! And some sprinkles aren’t going to kill ya – they will make everything a bit more fun!

Ingredients

  • 3/4 c almond flour
  • 1/4 c monk fruit
  • 1 tsp baking powder
  • 1 tbsp almond milk
  • 1 tbsp coconut oil, melted
  • Sprinkles or white chocolate chips (optional)

Instructions

Sugar Cookie Time!

  1. Preheat oven to 325
  2. Mix all wet ingredients together.
  3. Add in dry ingredients and mix well.
  4. Roll into about 9 balls and press down a bit with whatever toppings you want.
  5. Place parchment paper on a baking sheet. Place cookies.
  6. Bake for ~14 minutes (longer if you like crispier) and then let cool completely to harden.
