Healthy Pumpkin Cinnamon Rolls

Shocker alert: I made another pumpkin recipe! To be specific, healthy pumpkin cinnamon rolls! I know you all love it just as much as I do so they will continue to come until December hits in which case my holiday themed dishes will be in full FORCE!

Cinnamon rolls have always been a decadent morning treat, one that really has always transported me to the holiday and colder months to be specific. I thought, hmmm why don’t we make these for Thanksgiving morning? But make them healthy so they can count as a nutritious breakfast too? With that, the gluten free, sugar free, dairy free Pumpkin Cinnamon Rolls were born, and I LOVE THEM!

Pumpkin Cinnamon Rolls: The Perfect Duo

I don’t know about you, but the combination of pumpkin and cinnamon just does something for me. I’ll put the combo on toast, in cookies, pies, etc. Not to mention the benefits of cinnamon!
Cinnamon is obviously delicious, but it’s also got amazing benefits! So here are a few facts for you to make you feel good about eating this cinnamon filled sweet treat:
  • It’s anti-inflammatory!
  • Great anti-oxidant properties!
  • Lowers blood sugar levels!

But Let’s Talk About the GLAZE

So obviously this couldn’t just be any glaze..it’s infused with skin tightening collagen and calming CBD. Two things that are a MUST for the holiday season. Squeeze it in wherever you can right? The pumpkin cinnamon rolls are just perfection when they’re fresh out of the oven and topped with the glaze. I always add a bit extra, but that’s just me 🙂
I should also mention that this glaze is dairy free! I opted to use Miyokos Creamery plain vegan cream cheese. It’s my favorite brand as they skip all the extra gunk that is not required IMO. Here are my other favorites that you will need for the recipe:

Healthy Pumpkin Cinnamon Rolls

Ingredients

  • CINNAMON ROLL DOUGH INGREDIENTS:
  • Dry Dough Ingredients:
  • 1/2 c tigernut flour
  • 1/4 c cassava flour
  • 1/4 c coconut flour
  • 2 tbsp golden monk fruit sweetener
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Wet Dough Ingredients:
  • 1 egg
  • 2/3 c water (plus more if dough is too dry, add a tbsp at a time)
  • 1/4 c coconut oil, melted
  • 1/4 c pecan butter (or any creamy nut butter) `
  • Filling Ingredients:
  • 2 tbsp monk fruit maple syrup
  • 2 tbsp pumpkin puree
  • 2 tbsp golden monk fruit
  • 1 tbsp cinnamon
  • 1 tsp pumpkin pie spice
  • Glaze Ingredients:
  • 8 oz. plain vegan cream cheese (1 package)
  • 1/2 c monk fruit
  • 9 tbsp unsweetened almond milk
  • 2 scoops Ancient Nutrition Vanilla Chai Collagen
  • 1 tsp Ancient Nutrition Cinnamon CBD
  • 1 tsp cinnamon

Instructions

Let’s Roll With It!

  1. Preheat your oven to 350 and take your cream cheese out of the fridge to begin to soften. 
  2. Mix your dry dough ingredients in one bowl thoroughly and then whisk the wet in a separate bowl. 
  3. Gradually mix the wet and the dry ingredients together. If you need more water to make the dough softer, add 1 tbsp at a time. 
  4. Once your dough is mixed, place it in the fridge for 15-20 minutes to harden a bit. 
  5. While the dough is in the fridge, make your filling ingredients and whisk all together in a bowl 
  6. Lay out parchment paper on the counter and sprinkle down some tigernut or cassava flour, then place your dough down. 
  7. Place another piece of parchment paper down on top and begin to flatten the dough either with your hands or a rolling pin until it’s about a 1/2 inch thick and in a rectangle shape (the shape of the parchment.) 
  8. Once your dough is rolled out flat, start to spread the filling on the dough. 
  9. After the filling is spread evenly (use it all!), you can use a pizza cutter to slice the dough short ways (so that each piece is about 10-12in long). 
  10. After the pieces are cut, take each slice and roll it into a pinwheel cinnamon roll. 
  11. Place each roll into a greased pan. You can use a muffin tin, bread pan or brownie pan.
  12. Place in the oven and bake for 15-20 minutes
  13. Following, drizzle the glaze on the cinnamon rolls and ENJOY!
