Healthy White Chocolate Peppermint Cookies

Does is get more festive than holiday cookies?! Especially healthy white chocolate peppermint cookies?! I think not. These just scream holidays to me, and they’re super simple to make as well! Let’s dive into what you need to make them..

Chocolate Peppermint Cookies Specifics

These cookies are sooo amazing and will definitely be a hit for anyone on your list! I love making a homemade dessert to give for a gift or even just for yourself, lol! Here’s what you need: 

  • Sweetness: For the sweetener in this recipe, I used Monk Fruit sweetener, which I love because it’s a zero glycemic sweetener, which means it doesn’t affect your blood sugar. You can grab my favorite kind here. We also use both vanilla extract and peppermint extract which add a ton of flavor, too!PurelyPope White Chocolate Peppermint Cookies
  • Flour: I always love to bake with Almond Flour, which acts very similarly to an all purpose flour. It’s packed with protein, fiber and healthy fat which is why I prefer it! I like this brand, as well as the Costco Kirkland one.
  • Chocolate: This recipe calls for cocoa powder, which I recommend buying organic if possible, but definitely get the unsweetened one! Additionally, I used Lily’s White Chocolate Chips for the drizzle and White Chocolate Peppermint Bar for the cookies. I love Lily’s because it’s stevia sweetened! They have vegan options as well, but these two do contain dairy.
  • Candy Canes: Finally, this recipe of course calls for CANDY CANES! I chose to go with the Yum Earth brand, which are clean and organic too, which we love!

White Chocolate Peppermint Cookies

Ingredients

  • Wet Ingredients:
  • 1/2 c coconut oil, melted
  • 1/2 c + 2 tbsp granulated monk fruit sweetener
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 tsp pure peppermint extract
  • Dry Ingredients:
  • 1 ½ c almond flour
  • ½ c unsweetened cocoa powder
  • 2 tbsp tapioca starch or flour
  • 1 tsp sea salt
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 (80g) white chocolate bar, chopped or 1/4 c white chocolate chips
  • For Topping:
  • ~3 candy canes, crushed
  • 1/4 c white chocolate + 1 tsp coconut oil

Instructions

White Chocolate Peppermint Cookies

  1. Preheat the oven to 350 degrees.
  2. Add all wet ingredients to a medium bowl.
  3. Once in the bowl, beat with a hand mixer or immersion blender until well combined, set aside.
  4. In a large separate bowl, add in all dry ingredients except for the white chocolate and whisk together until well combined.
  5. Combine the wet with the dry and mix well.
  6. Once combined, fold in the chopped white chocolate.
  7. Cover a baking sheet with parchment paper and roll dough into cookies (~1 tbsp each) and place on the tray. Once spaced on the tray, flatten the cookies gently with your hands.
  8. Bake for ~10-12 minutes.
  9. Once cookies are done, immediately add crushed peppermint on top of the cookies and gently press into each cookie.
  10. While cookies are cooling, melt your white chocolate and coconut oil by placing in a microwave safe bowl and microwave on 10 second increments, stirring between until melted completely.
  11. After melted, use a fork to drizzle over the cookies. Let cool and enjoy!
