It’s April which obviously means that Easter (or Passover) is right around the corner! For me, Easter means Carrot Cake – literally one of my favorite items to eat on earth! Carrots in general are one of my favorite foods if I’m being honest. I’ve been on a real carrot kick lately and I’m not mad about it. Actually, I’m pretty damn excited about it because you guys will LOVE these Carrot Cake Bliss Balls!

  • Additionally, they’re a great source of fiber, Vitamin C & K. 
  • Carrots assist in improving eye health, boosting immunity, aiding in digestion and reduces inflammation

Carrot Cake (No-Bake) Bliss Balls

Ingredients

  • 1 cup carrots, shredded
  • 1 serving vanilla protein powder
  • 4 tbsp coconut flour
  • 3 tbsp hemp seeds
  • 4 tbsp ground flaxseed
  • 2 tbsp coconut oil, melted
  • 1 tsp cinnamon

Instructions

Crazy for Carrots!

  1. Put shredded carrots in a bowl and add the coconut oil.
  2. Slowly add in each of the remaining ingredients, stirring constantly throughout the way. 
  3. Using a tablespoon, scoop out the ‘dough’ and roll into balls.
  4. Place in a Tupperware container and store in the refrigerator. Let harden for 15-30 minutes. 
  5. Enjoy as you wish!
