No Bake Cookies: 5 Ingredient Chocolate Chip
If you’ve caught on by now, you know that I LOVE my sweets. Make them gluten/grain free, vegan sugar free, no bake cookies and I’m REALLY a happy camper. These are also the easiest & you don’t even have to use your oven. How amazing is that? Read on to learn about the deets!
No Bake Cookie Deets!
It’s so amazing what you can do with so many natural ingredients that come from the one and only – mother nature! Let’s walk through the five ingredients we used in these cookies and why I love each on of them!
- Nuttzo 7 Seed Butter: I’m a huge fan of this because it adds in lots of fiber and is only 2g net carbs, 4g protein and no sugar added. Should you choose to use a different nut butter, choose one with no added sugar or oil.
- Bob’s Red Mill Fiber & Protein Nutritional Boost: Love this because it’s unflavored, super clean and truly a boost of nutrients. It packs 20g protein, 12g fiber and only 2g net carbs!
- Organic Dates: Instead of using a sweetener, I opted to just use dates to sweeten and hold the cookie together. These are a great source of antioxidants and truly nature’s candy.
- Pure Vanilla Extract: Always be sure to use organic, and make sure it says pure extract vs. flavor!
- Vegan Chocolate Chips: Love doing dairy free and sugar free chocolate chips because, why not?! No need for the dairy or the sugar!
With all of those, you’re stocked! Also, be sure you have a solid food processor as well. That’s a requirement for these cookies!

Ingredients
- 1/2 c Nuttzo 7 seed nut butter (or any nut butter)
- 1/4 c Bob's Red Mill Fiber & Protein Nutritional Boost (any unflavored protein powder or collagen would work)
- 2 dates, pitted
- 1 tsp pure vanilla extract
- 1/4 c vegan, sugar free chocolate chips
Instructions
No Bake Time!

Add all ingredients besides the chocolate chips to a food processor and blend.

Test dough & if too crumbly, you can add a dash of maple syrup or another 1/2 date.

Add in chocolate chips and fold in.

Mold dough into 6 balls and flatten into cookies.

Refrigerate for 10-15 min to harden & enjoy! Store in the fridge!!
