Festive AF Shaved Brussel Salad

Happy HUMPDAY!! We’re officially less than two weeks out from Christmas, so of course my mind is on some healthy recipes for you all to bring with and force your fams to get in their greens! More specifically, get in a delicious brussel sprout salad. I love this dish because it’s healthy but also gives people a bit of indulgence with the Turkey Bacon in the mix.

I’m always the culprit of either bringing along my own healthy side dish and/or a healthy dessert. If you’re still looking for a good dessert, try these cookies – they’re killer! This way, if you are spending the holiday at someone else’s house, you’re guaranteed to have a healthy side, count on them for protein, and a healthy dessert that you can enjoy.

But actually though, I really am brusselin’ every day! Is it just me, or are Brussel Sprouts a crowd favorite no matter what? They’re always great when roasted, but they can also be a salad base if they want to be. Very versatile!

Not only are Brussel Sprouts a crowd pleaser, but they also pack SO MANY good benefits for you! According to the Medical Medium, you can get the most out of the green vegetable by eating it raw – so you’re in luck, this raw salad requires no cooking, whatsoever! The vegetable is also rich in antioxidants, vitamins C, A, and E, and a good source of omega-3 fatty acids.  The omega-3 fatty acids are very important brain fuel! If you ask me, a good salad bowl is an absolute NECESSITY when it comes to stocking a kitchen. It makes everything a bit more fun too. I couldn’t find the exact one I have, but I’m loving this bamboo bowl with the tongs.  As far as ingredients go, this is mainly a produce recipe, so my piece of advice there is go organic where/when you can. In terms of dressing, I’m a big fan of this apple cider vinegar and this tahini. Enjoy!

Festive AF Shaved Brussel Sprout Salad

Ingredients

  • For the Salad:
  • 1 package shaved Brussel Sprouts
  • 2 shallots, sliced
  • 4 pieces of turkey bacon, cooked
  • 1/2 cup pomegranate seeds
  • 1/2 cup pumkin seeds
  • 2 tbsp slivered almonds
  • Salt and pepper, to taste
  • For the Dressing:
  • 2 lemon, juiced
  • 4 tbsp balsamic vinegar
  • 2 tbsp apple cider vinegar
  • 2 tsp tahini
  • 1 tsp chili flakes
  • 1 tsp Tajin

Instructions

Let’s Get Festively Green! 

  1. First, get all of your salad ingredients prepped and ready. mix all of the greens together in a large bowl.
  2. Dice the turkey bacon how you see fit and mix that into the salad as well.
  3. Save the almonds for topping and sprinkle them once the dressing is mixed in and ready to serve. 
  4. Second, use a whisk and add all of the dressing ingredients into a small bowl until well combined. 
  5. Drizzle the dressing over the salad and mix in well. 
  6. I like to let sit in the fridge for a bit to marinate (about 30 minutes is good.)
  7. Then, sprinkle with the sliced almonds and serve!
