Plant Based Hummus Quesadillas

These plant based hummus quesadillas are so delicious and a super simple plant centric lunch, snack or dinner! It’s a recipe that you most likely already have all of the ingredients in your fridge. It’s also a very versatile recipe, so you can change it up how you see fit!

Hummus Quesadillas

As I mentioned these hummus quesadillas are so simple and absolutely delicious. They’re a great option to throw together if you’re in a rush or even for an appetizer at a (socially distanced) party! Here’s the deets:PurelyPope Hummus Quesadillas

  • Tortilla: These specific quesadillas pictured were made with Angelic Bakehouse Tortillas which I love, I also am a huge fan of Nuco Coconut Wraps, La Tortilla Factory low carb tortillas or Food for Life Baking Ezekiel Tortillas.
  • Hummus: It’s super simple to make your own hummus at home, but there are also a ton of amazing brands you can find at the store. I’m personally a big fan of Ithaca Hummus and Brami Snacks Lupini Bean Hummus. Overall, just look to ensure the hummus is only extra virgin olive oil, chickpeas (or any beans) and seasonings.
  • Veggies: For these specific hummus quesadillas I used zucchini, tomato and white onion. However, this is super versatile! I would love some sautéed spinach, green olives and tomatoes for a greek twist or you could even do eggplant and some red pepper! The possibilities are truly endless.

Hummus Quesadillas Specifics!

These quesadillas will vary greatly on macronutrients depending upon what tortilla, hummus and/or veggies you use, so I’m not going to add those here. But, I love Lose It or My Fitness Pal if that’s something you would like to track on your own!

Hummus Quesadillas

Ingredients

  • 1 tortilla
  • 2-3 tbsp hummus
  • 1/4 zucchini, sliced & sauteed
  • 2 tbsp tomatoes, diced
  • 1 tbsp white onion, diced
  • Avocado or olive oil spray

Instructions

Dilla Time!

  1. Prepare your quesadilla and spread hummus on half of the circle. 
  2. Add veggie toppings atop the hummus (zucchini, onion, tomato.0
  3. Fold quesadilla and place on a greased skillet on medium heat. 
  4. After ~2-3 minutes, flip and cook evenly on the other side.
  5. Remove from pan, slice and enjoy!
