Easy AF Healthy Pumpkin Butter

The second I feel a chill in the air is the second I start craving anything/everything pumpkin. More specifically I was craving a healthy pumpkin butter! This pumpkin butter is super simple and can be used on toast, bread, banana bread, with some fruit, on pancakes, etc. – really anything!

Healthy Pumpkin Butter Specifics

PurelyPope Healthy Pumpkin ButterThis pumpkin butter doesn’t have the name ‘Easy AF’ in it for no reason – it’s super simple! No crazy ingredients needed. It’s super versatile and can be used with truly anything in the Fall. Here’s what you need:

  • Pumpkin: Of course :)..I like to buy canned organic pumpkin in a BPA free can. Typically the store brand will be able to meet this criteria. Just be sure that it’s no added sugar and not ‘pumpkin pie filling’ – all you need is the organic pumpkin puree.
  • Spice it up: For this recipe, I used a combination of Pumpkin Pie Spice, Cinnamon and Pure Vanilla Extract. Be sure that it’s pure vanilla extract instead of the ‘vanilla flavor’ which is completely artificial and full of chemicals.
  • Sweeten it up: To sweeten this, I used monk fruit sweetener, as well as monk fruit maple syrup. However, regular pure organic maple syrup would be delicious as well!

As always, I like to provide nutrition information for my recipes, but I do like to caveat that I’m a big believer that if you’re putting quality ingredients into your food and body, you don’t need to worry about calories or tracking! I personally don’t track anything, but do whatever works for you!

That being said (and based on using pure organic maple syrup), this recipe is 34 calories, 1g fat, 6g carbs, 1g fiber, 4g sugar and 0g protein per serving, based off of 16 servings.

Ingredients

  • 1 can pumpkin
  • 1 tbsp monk fruit
  • 3 tbsp maple syrup
  • 1 tbsp pumpkin pie spice
  • 1 tbsp cinnamon
  • 2 tbsp vegan butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

Pumpkin Butter Time!

  1. Add all ingredients to a bowl.
  2. You can hand mix or do with a hand blender so that it’s whipped!
  3. Enjoy!
