Healthy Sweet Potato Pancakes

As I mentioned to you in my last post (see – sweet potato pasta), fall definitely has me craving ALL things root veggies. ESPECIALLY in the mornings! Enter: Healthy Sweet Potato Pancakes! I’m a big fan of starting the day off with a hearty breakfast, and these sweet potato pancakes hit the spot! Let’s get into it!

Healthy Sweet Potato Pancakes Specifics

These sweet potato pancakes are absolutely amazing for a Fall breakfast. Perhaps a mid week brunch session or over the weekend too. Hell, you could even enjoy them for dinner! Here’s what you need..PurelyPope Sweet Potato Pancakes

  • Sweet Potato: I used canned sweet potato puree, which is super simple to find at the store! I absolutely love using this nutrient dense veggie which is packed with Vitamins B and C, you can’t go wrong!
  • Spice it up: For this recipe, I used a combination of allspice, cinnamon (duh) and nutmeg.. You can also totally use a pumpkin pie spice if you don’t have those three, or even just the cinnamon!
  • Sweeten it up: I personally used a little Monk Fruit sweetener, which I love because it has zero glycemic index (and thus doesn’t spike our blood sugar), but any that you have on hand will do! Another favorite of mine is coconut sugar. I also added in a bit of pure vanilla extract.
  • The flour: AKA the main portion of the pancakes! I opted to use Almond Flour, which I love because it adds in a bit of protein and healthy fat to the mix in our batter! I haven’t tested it with other flours.
  • Special touches: I finished my pancakes with some Ghee and Pure Maple Syrup (the Costco one is my JAM), and seasonal fruit. The special touches matter!

Sweet Potato Pancakes

Ingredients

  • WET INGREDIENTS:
  • 1/2 c sweet potato puree
  • 2 eggs
  • 3 tbsp unsweetened nut milk
  • 1 tsp pure vanilla extract
  • DRY INGREDIENTS:
  • 1 c almond flour
  • 1 tbsp monk fruit sweetener
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp sea salt

Instructions

Pancake Time!

  1. In a large bowl, whisk together all of the wet ingredients (sweet potato puree, eggs, nut milk, vanilla) and mix well.
  2. In a separate bowl, combine all of the dry ingredients and mix well.
  3. Combine the wet and dry ingredients until your batter is ready.
  4. Add batter into pancakes on a heated non stick or greased pan (about medium heat)
  5. Once bubbles arise on the pancakes, flip pancakes and allow to cook until cook through.
  6. Repeat as much as needed & enjoy!

Notes

Batter will make about 8-10 pancakes.
